powder (khoya or mawa), which is kneaded with a touch of flour and baking soda to create the perfect texture.
The dough is then shaped into small, smooth balls that are uniform in size. The magic happens when these
balls are deep-fried in ghee or oil until they achieve a beautiful golden-brown color. The frying process
is crucial—we maintain the perfect temperature to ensure the jamuns cook evenly, developing a crisp exterior
while remaining soft and spongy inside.
Once fried to perfection, the golden jamuns are immediately immersed in a warm sugar syrup (chashni) that
has been infused with cardamom pods and a hint of rose water. The syrup is prepared with the perfect balance
of sugar and water, creating a fragrant, sweet liquid that the jamuns absorb. The warm jamuns soak up the
syrup, becoming soft, moist, and incredibly flavorful. We serve our Gulab Jamun warm, garnished with
